Jaqueline Valadez Pastor, nutritionist and head of the Food Service of the School of Dietetics and Nutrition (EDN) of Issste, explained that food safety must be generated from its production, handling, storage and consumption, that is, to ensure that throughout this process there are no health risks that could cause any disease.

The ailments attack the digestive system, he pointed out, and the most vulnerable population are children and the elderly, mainly during the hot season. Dehydration is the main symptom and constitutes the greatest risk, because it starts with uncontrolled vomiting and diarrhea and people can die.
